Today I wanted to share with you my easy vegan chilli recipe. It’s the first time I’ve ever used a spice mix pack, and I can tell you now, I’m impressed!
Winter is the time for heartwarming bowls of soup, stew and chilli. Food’s that will fill you up and keep you warm. What’s even better is that they’re the types of food which are perfect for batch cooking and popping in the freezer!
One of my absolute favourite meals to make is chilli, especially veggie chilli mainly because you get to have nachos as well!
I’ve teamed up with Schwartz to try their hot chilli con carne herb mix to make the perfect easy vegan chilli which is bursting with flavour!
Quick and easy vegan chilli with Schwartz

Ingredients
1 tbsp olive oil
2 small red onions
2 cloves garlic (minced/finely chopped)
1 sweet potato (chunked)
3 carrots (diced)
1 pepper (chopped)
400 g kidney beans (drained)
400 g chickpeas (or mixed beans) (drained)
400 g chopped tin of tomatoes
250 ml water
1 packet Schwartz hot chilli mix
Directions
- In a large pan, heat up the olive oil. Add the garlic and onions and cook until softened
- Add the rest of the vegetables and cook for 5 minutes
- Add the beans, tomatoes, water and herb mix and mix together until the herbs are all mixed in
- Bring to the boil and then simmer for half an hour until all the vegetables are cooked
- Serve with fresh coriander, rice, nachos and some guac

This was the first time I’ve ever used a herb mix pack and I was so impressed with how easy they are to use!
They’re the perfect blend for the recipe so you don’t need to worry about having all the right herbs in the cupboard.
The flavours are perfect as well. I wouldn’t usually go for super spicy but this was actually a really nice heat.
It made it a lot easier to make the chilli too, especially if you’re in a rush, as the blend is just right. I’ve been known to be slightly heavy-handed with herbs before and this stops that problem completely!
Which is what makes this the perfect mid-week meal – it’s no fuss, has your five a day in and tastes delicious.
